TASTING NOTE


The surprise of an original, classic but peculiar Cava comes from the desire to honor its origins, the Champagnat. The surprise of the integration of cultures. Indeed, adding to its origins, this cava is made from Xarel.lo, Macabeu, and Parella- da, the three classic varieties of Catalonian vines. A 12-month mousse fermentation on slats allows all its splendor: a fresh, young, and fruity cava with no expedition liquor that does not condition.

Its straw yellow, clean and bright color, with a soft and constant carbonate, is an allegory of the land, the Mediterranean, heat, celebration, and sharing. Made of very young fruit flavors, combines notes reminiscent of green and sour apple, with hints of fields and dew. It brings an essen- tial mouthfeel of brut nature, pleasantly constant carbonic and acid and clean finish.

A mild summer, a hot afternoon, anytime is good to enjoy a product that celebrates a peculiar word: CAVA.

PRODUCTION AREA


Alt Penedès. Cava Designation of Origin.

The vines are between 25 and 50 years old.

Clay-limestone and clayey-sandy soils.

Our vineyards, located in the Alt Penedès area, are protected by two

mountain ranges facilitating a particular microclimate. This makes the

Penedès a privileged area for viniculture.



CLIMATE


A cold and dry winter. A dry and mild spring, with some late frosts.

Good sprouting of the vine. Late spring and summer are characterized

by higher than normal temperatures. The dry weather continues.

Mid-August to mid-September heavy rains coincides with the harvest.



HARVEST


Healthy harvest and good ripening of the grapes. Harvest from the 2nd

week of August to the 2nd week of September.
